MANAYI GREEK SALAD 🙂
Great for your summer garden parties and to a friends barbecue! Our first receipe comes direct from the Village House 🙂 We present to you Eve’s delicious fig, walnut and feta cheese salad. Enjoy 🙂
Ingredients
Mixed leaves including beetroot, spinach and rocka
1/2 cup of walnuts
1 cup of figs quartered
1 cup of pomegranate
1 cup of cherry tomatoes halved
1 cup of olives (black or green)
One whole feta cut in small pieces
Recipe
Line a shallow salad bowl with all your mixed leaves.
Turn cup of walnuts, figs, pomegranate and pile on each side of salad dish over mixed leaves.
In the centre add the feta, cherry tomatoes and olives.
Dressing
1/2 cup of Manayi Olive oil
Half cup of balsamic vinegar
1bsp of honey
One lemon
Salt and pepper to taste
Pour dressing over salad, mix it all together and and serve.
Eve’s message to you all.
‘You can substitute the balsamic for apple cider vinegar, same quantity just fresher in the summer. Also if it’s winter just use dried figs if fresh ones aren’t in season’
